This sounds very interesting, but I have two questions:
I buy my instant yeast in the larger packs; what weight/tsp would this recipe use?
One tablespoon of salt to 1kg flour is more than I usually use for bread – is it to counteract the sweetness of the carob syrup?

The yeast sachets are 11grams each so roughly 22 grams of yeast.
The salt is slightly more than usual due to the fact that along with 1kg flour there is approximately an additional 300 to 400g of seeds and wheat kernels in the dough.
